It’s St. Patrick’s Day Weekend!!!! The sun is shining!! It’s actually very warm here in California, reminding all of us why we pay so much to live here. It has been so nice to drive around with the sunroof open, blasting my music (when I am alone in the car) and soaking in some much needed vitamin D. I have a feeling we are in for one more cold snap though. Just a gut feeling. Or maybe I just don’t want to do the yard work. As much as I want a nice garden, the reality is we have some kind of underground varmint currently ruining our grass. The last thing I want to do is plant vegetables for someone else to enjoy.
So if you are a regular reader or follower on social media, you know my love for crusty bread. I call it one of the easiest breads you will ever make. However, there is one easier. And it is delicious. And it freezes well. And EVERYONE has had the store bought version of it at some point in their life. English Muffin Bread. This really and truly is the easiest bread you will ever make. And I am due to make some. I eat a slice of this bread toasted nearly every morning with my poached egg. I also have had it with honey, apple butter and homemade preserves. It tastes so close to an english muffin and the price can’t be beat. You just need a large family or some freezer space because this make 4 large loaves. I split each large loaf into fourths and wrap and freeze them. Since it is only me in the house that eats it, a fourth of a loaf lasts me a week. That means an entire recipe can last me up to 16 weeks. That’s about 13 packages of english muffins for the price of a small bag of flour and some yeast. Get baking!!!
And one more piece of good news, we got a new grill!!! I love to grill and our older cheap one got really rusted last year. If I wanted to grill I had to cover the grates in foil. It was terrible. Needless to say, I am super excited!! So we have two grilling recipes this week. One I have made before and the other I have made a stove version of the recipe. Plus with the weather being so nice…it’s screaming with “Cook outdoors!!! Enjoy the sunshine!!!” So onto next weeks menu!
SMOOTHIE: Blueberry Banana Green Smoothie
DINNER: Pizza Stuffed Chicken Breasts and a salad. These are pretty tasty and healthy, so a win-win!
SWEET-TREAT: These M&M Cookies came through my email today and I must try them!! The best part is that I can freeze the dough balls and pop one or two out of the freezer at a time….for my son of course! hahahahaha ***These cookies were amazing!! They were so puffy and chewy and full of M&Ms. And in reading this recipe, i linked up to her Maraschino White Chocolate Chip cookies which were equally as amazing! Go bake some up right now!!!!!
SMOOTHIE: Cinnamon Apple Green Smoothie
BREAKFAST: I just got emailed these amazing looking Buttermilk Strawberry Sprinkled Pancakes!! I am thinking about trying them out if my son is up for a new recipe. My husband has a saying, “bread isn’t breakfast.” His loss. ***These were tasty and delicious. The picture shows them without strawberries mixed in, he preferred them on the side. I did make them with strawberries mixed and and they were so tasty. I highly recommend these pancakes!!!!
DINNER: Grilled Chicken Fajita Kabobs. These are very tasty. You can serve them with all the traditional fajita fixings if you like; beans, rice, tortillas, sour cream, guacamole and salsa. I love grilling kabobs.
SUNDAY–ST. PATRICK’S DAY!!
SMOOTHIE: My famous fudge smoothie!
DINNER: Reuben Hash. This is SO good. Ever since Rachael Ray put it on her show, I have made it for St. Patrick’s Day. I probably should make it more than once a year since my husband does love it so much. But I forget, until this day rolls around again.
APPETIZER/SNACK/LUNCH: Guacamole Deviled Eggs Cant get enough green on St. Patrick’s Day and these look tasty! 9Never end up making these. Had beer battered french fries with a horseradish dipping sauce at the town’s St. Patrick’s Day festivities.)
SPECIAL TREAT: Pistachio St. Patrick’s Day Bread. This looks really tasty and it’s green! I will probably leave the nuts out since my son won’t go near it with nuts. Or maybe I will pour batter for one loaf, then mix in some nuts for the second loaf. There’s an idea!! ***This was pretty tasty. I didn’t add any extra nuts into the batter, more of a personal preference than anything else.
SMOOTHIE: Coconut Banana Green Smoothie
DINNER: Another grilling day!! So for my husband I will grill a small steak and serve it with onions and mushrooms on top similar to Texas Roadhouse. In in the spirit of Texas Roadhouse, I am going to try my hand at some dinner rolls that are supposed be like those found at the restaurant. For me I am going to try Grilled Bangin’ Shrimp. The regular bangin’ shrimp is so tasty I can’t wait to try this one!!! And for both of us I am going to try a new recipe for BBQ Rosemary Sweet Potatoes. I love sweet potatoes pretty much just as they are. Throw a little spice on them and I am in heaven.
SMOOTHIE: none today, lately this has been tea Tuesday where I meet a friend for morning tea at any one of the neighborhood Starbucks.
DINNER: Crockpot Sweet & Sour Pork with Spicy Sriracha Roasted Broccoli. This pork is a new recipe and sounds delicious. The broccoli has quickly become a favorite of ours. i will also serve this with rice for my husband and possible some quinoa for myself. I will make extra quinoa them pull from it to make lunch from any of these yummy recipes on my pinterest board!
SMOOTHIE: Sweet Potato Smoothie
SMOOTHIE: none today, this has always been my day to indulge in a Skinny Caramel Macchiato. You might even see me sitting in a local Starbucks working on this very blog while handing out some bread to my favorite baristas. :)
As you may have noticed over the last few weeks, I tend to plan leftovers on Wednesdays and Thursdays. This leaves me flexibility through the week. Sometimes a dinner doesn’t get made. That happened last week when my son came home with a great report card and we went out to dinner instead. Sometimes I may have the leftovers on a Monday and then cook a dinner on Thursday. However, since I do my grocery shopping early Friday mornings, I tend to cook the food when it is freshest leaving the end of my week for whatever is left. However a more fun note….I will be trying a new flavor of crusty bread…. Apple Spice!!! Stay tuned for a review! ***This bread was amazing!!! Very comparable to the pumpkin spice one I made recently. I used apple butter, apple pie spice and dehydrated apples. Top is with some cinnamon butter!!! Definitely one of my favorite flavors!
